In observance of March for Meals, the Shenandoah County Senior Center held its Cookie Contest last Thursday. The winning recipe – Oatmeal Cookies – was baked by Virginia Henderson.  In addition to her blue ribbon, she received a $35 gift card.  Second Place Winner was Thelma Jones who received a $20 Gift Card and Third place with a $20 Gift Card went to Betty Bucher.  Go to www.shenandoahaaa.com and look under the tab Senior Centers.  Our Community Champions and judges for this contest were: Rev. Daryl George, First Baptist Church of Woodstock, Steve Wood, Vice-Chair Edinburg Town Council and Steven Baker, Shenandoah County Board of Supervisors.

 

Oatmeal Cookies baked by Virginia Henderson

Combine 1 cup softened butter (2 sticks) with ¼ cup granulated sugar, ¾ cup packed brown sugar and 1 package instant vanilla pudding mix.   Add 2 eggs and mix.  Add 1 ¼ cups unsifted flour and 1 teaspoon Baking Soda.  Mix in 3 ½ cups quick cooking oats and 1 cup raisins or nuts (optional).  Drop by teaspoon on cookie sheet.  Bake at 350 degrees for 10 – 12 minutes until lightly browned.
