In observance of March for Meals, Winchester Senior Center held its Cookie Contest last Wednesday. The winning recipe – White Chocolate Chip Macadamia Nut Cookies – was baked by our only male entry Bob Shaeffer. In addition to his blue ribbon and bragging rights, Bob received a $35 gift card. Second Place Winner was Janet Bender and Third place went to Goldie Hamilton.  Our Community Champions and judges for this contest were: John David Smith, Mayor of Winchester, Chris Mitchell and Rosie Walsh of Q102 and Sue Lessman, SAAA Board Representative from Winchester.

Bob Shaeffer’s White Chocolate Chip Macadamia Nut Cookies

1 small box (3.4 oz.) instant vanilla pudding

¼ cup sugar

¾ cup light brown sugar (firmly packed)

2 sticks butter or margarine, softened

2 large eggs, well-beaten

1 teaspoon baking soda

2½ cups flour

½ cup macadamia nuts, chopped

½ cup white chocolate chips

Preheat oven to 350 degrees.

Combine pudding, sugar and butter in large mixing bowl. Add eggs and mix thoroughly. Gradually add soda and flour, mixing thoroughly after each addition. Stir in chips and nuts. Dough will be stiff. For each cookie, scoop out a chunk of dough the size of a golf ball and roll between your hands. Place balls on lightly greased cookie sheet approximately two inches apart, and flatten slightly. Bake 11 to 12 minutes. Remove from oven and cool fiveminutes. Remove to rack to finish cooling.
